Looking for a creative Valentine’s Day treat? Floral cakesicles are a fun edible canvas, and I couldn’t resist experimenting with the idea of piping mini floral bouquets onto them. These designs are an elegant, unique alternative to traditional cake pops.
This project started as a bit of an experiment—I had a vision of flat-laying bouquets on cakesicles but wasn’t entirely sure how to execute it. Once I got started though, I couldn’t stop! From coating the cakesicles to piping the flowers, the process felt creatively energizing, even with a few hiccups (like maneuvering around the camera while filming). They’re not perfect, but I love how they turned out, and I’m excited to share the steps!

- Cake pop dough; flavor of your choice

How to Create Floral Cakesicles
Shape and Coat Your Cakesicles
Shape and coat your cakesicles:
- Press enough cake pop dough into your mold to fill the space completely.
- Dip a popsicle stick into melted candy melts and insert it into the bottom of the mold. (I had a small amount left over from another project)
- Let the cakesicles set in the freezer for 5–10 minutes to firm up.


Prepare your candy melts:
- Melt your candy melts in a container that’s deep enough to fully submerge a cakesicle.
- I used Sweet Tooth Fairy Meltables in Bright White and tinted them with a bit of green and blue Color Mill dyes for a faint teal color.

Coat the cakesicles:
- Remove the cakesicles from the mold once they’ve set.
- Dip each cakesicle into the melted candy, ensuring the whole cakesicle is coated.
- Gently wiggle or tap off the excess candy melts, or use a small offset spatula to scrape off any extra from the underside.


Set the cakesicles:
- Place the coated cakesicles on a parchment-lined tray and let them set completely before decorating.

Pipe Your Mini Bouquet
Create the flower stems:
- Using royal icing dyed green, pipe stems with a Wilton tip #3. Mimic how bouquet stems are typically tied.

Add small half-roses:
- Switch to a Wilton tip #102 and pipe small half-roses at random points of the stems using red royal icing.


Fill in the spaces:
- Use a small open star tip (like Wilton #14 or #16) or a small round tip to pipe flowers or filler details. I kept mine white, but feel free to choose any color you like!

Customize your bouquet:
- Add as many or as few flowers as you like to achieve your desired look.
- Sprinkle edible glitter or pearl dust for a glamorous effect.

Tips for Success
- Candy melt consistency:
- Ensure your candy melts are the right consistency for coating—if they’re too thick, they won’t spread evenly. (I ran into this issue during this round, so thin them as needed.)
- Cakesicle temperature:
- Avoid dipping cakesicles that are too cold, as this can cause the candy melts to set prematurely, creating uneven and/or cracked coatings. (This is my worst habit!)
- Scraping excess coating:
- When scraping the underside of your cakesicles with an offset palette knife, dip the knife in warm water and wipe it clean before using it on the next cakesicle.
- Royal icing vs. buttercream:
- You can use buttercream for the flowers, but I chose royal icing because it hardens, making the bouquet sturdier.
- Food dye caution:
- Make sure the food dye you add to your candy melts is oil-based and free of water; water and candy melts don’t play well together.
- Royal icing consistency:
- Your royal icing should be the right consistency for piping detailed flowers—firm enough to hold its shape but soft enough to pipe smoothly. See the photo below for reference:
